ingredients

180 g of dark chocolate
3 white 3 egg yolks
1 dl of fresh cream
20 g of split soft butter
1 good cuil. to s. whole milk
15 g caster sugar

Steps

Step 1

Chop the chocolate with a knife, put it in a large bowl. Heat milk and cream. In the first broth, pour over the chocolate and whisk for 1 to 2 minutes: the cream obtained must reach the temperature of 40 ° C. Add the butter and whisk.

2nd step

Whip egg whites and sugar in firm snow. A few seconds before the end, add the egg yolks. Mingle a little chocolate snow, pour over the remaining snow, mingle and gently lift the whole thing.

Step 3

Pour the mousse into a large bowl, take 4 hours in the fridge.

For a firm whipped cream:

Melt white or black chocolate.
With or without cream, to make quick and simple, place it in a large saucepan over very low heat. As soon as the squares are soft to heart, turn off the heat to smooth. It's faster than the bain-marie, it's more precise and safer than the microwave.
