Steps

Step 1

Prepare the dough: drop the flour into the bowl through the strainer. Dig a large hole, pour in lukewarm milk, then yeast; let it swell. Add 1 pinch of salt, sugar, egg yolk and beer. Blend with a whisk from the center, gradually incorporating the flour. Put the laundry on the salad bowl, let doubling in volume (1 h - 1 h 30) warm (30-35 ° C).

2nd step

10 min before serving: preheat the oil bath to 180 ° C. Whip egg whites and a pinch of salt in very firm snow. Mingle in the dough by turning briefly from bottom to top (go to the bottom).
