ingredients

For the orange mousse :
the juice of 2 oranges
3 c. orange zest
120 g of smooth white cheese
3 eggs
150 g of sugar
2 sheets of gelatin

For the apple preparation :
3 Ariane apples
1 jar of apple jelly
40 g of butter

Steps

Step 1

Prepare the orange mousse: soften the gelatin in a bowl of cold water. Heat the orange juice and add the softened gelatin to melt off the heat while whisking.

Let cool. Whip the egg yolks and the sugar. Add the cottage cheese and orange juice to cool.

Mix well. Beat the egg whites until they are very firm and incorporate them very gently in the preparation.

2nd step

Spread the mousse in six individual molds, not exceeding two-thirds of the height of the mold.

Place in a cool place for 2 hours. Peel and remove the hearts and seeds of Ariane apples. Cut them into thin strips and each slice in half.

Step 3

Melt the butter in a pan. Add the Ariane apple slices and brown over medium heat. When they are a nice amber color, add the Ariane apple jelly and continue cooking for 5 minutes, stirring gently.

Pour the Ariane apples with apple jelly on the orange mousse and serve immediately, directly in the molds.
