ingredients

1 passion fruit

30g of candied ginger cut into mini-dice

A few drops of lemon juice

Preheat oven to 200 ° C.

Heat the water and butter in a saucepan over low heat, until the butter is melted.

Remove from the heat, sifted flour and salt. Beat vigorously with a wooden spatula until the mixture is homogenous and peel off from the walls.

Add whole eggs one at a time and beat until elastic. With a spoon, place small piles of dough on a parchment paper.

Bake for about 30 minutes and then open the door of the oven and cook for another 5 minutes so that the cabbages dry.

Heat 20cl of milk, dilute the starch in a little cold milk, then add to the rest of the milk with the melted vanilla pod and half the sugar.
Stir and bring to a boil.
Remove the vanilla bean and pour over the egg / sugar mixture. Whisk and heat to thicken the cream, then chill in a bowl, cover with a food film.
