There are indeed several kinds of acetates. They are used as preservatives and acidity regulators. Potassium acetate (E261) is found in many spirits and dietary foods. The E260 additive is found in canned vegetables and fruits, industrial mozzarella, baby foods, fermented products and cereal-based formulas. Mention may also be made of calcium and sodium acetates (E262). Zinc Acetate (E650) enhances the flavors of foods as a flavor enhancer.
Acetates in their natural state
While food additives are widely used in industrial products, they can also be found in unprocessed foods. Indeed, the fermentation phenomenon produces acetates. This is how ethyl acetate and isoamyl acetate are manufactured in large quantities in bananas and ripe apples. Isoamyl acetate is also present in rosé wines, and particularly in Beaujolais.
