ingredients
8 Dolwen® potatoes
2 tomatoes
1 zucchini
1 shallot
1 cucumber
2 egg yolks
1 natural yoghurt
some mint leaves
1 lemon juice
10 cl of olive oil
1 spoon of Dijon mustard
Salt and pepper
Steps
Step 1
Cook the Dolwen® with the skin, starting with cold salt water, for 20 minutes.
2nd step
Seed and peel the cucumber, cut into small cubes.
Step 3
Also cut the zucchini and tomatoes in.
Step 4
Peel the cooked potatoes and cut them into pieces.
Step 5
Mix all the vegetables then add the chopped shallot and the mint leaves.
Step 6
Mix the yoghurt with the 2 egg yolks, add the mustard, the lemon juice and the olive oil.
Step 7
Salt, pepper and add this salad dressing, serve.
