ingredients

1 beautiful farm guinea fowl

16 kumquats

500g peeled chestnuts

12 baby onions

2 shallots15cl of Porto

1 C. fresh grated ginger

2 tbsp. tablespoon of olive oil

50 g of butter

1 glass of chicken broth

1 bay leaf

Steps

Step 1

Wash the kumquats and cook them for 5 minutes in boiling water. Drain .

2nd step

In a casserole, heat the olive oil and brown the guinea fowl on all sides. Add chopped shallots and ginger, pour the port, salt and cook on low heat for 30 minutes. Arrange the kumquats around the guinea fowl and continue cooking 15min.

Step 3

Melt the butter in a pan and brown the chestnuts and onions for a few minutes. Pour a little broth , add the bay leaf, cover and cook on low heat and covered for 15 minutes adding a little broth when necessary. Salt, pepper and continue cooking for 10 minutes .

Step 4

Cut the guinea fowl and reduce the juice with kumquats. Arrange them around with chestnuts before serving
