500 g whiting fillets
2 slices of lemon confit?
1 small red onion
1 clove of garlic
1/2 bunch of coriander?
1 small glass (12 cl approx.) Of dry white wine

Steps
Step 1
Chop onion and garlic, chop coriander.
In a propeller robot, mash fish and lemon confit, transfer to a bowl, add garlic, onion, coriander, salt, pepper mill, mix.
2nd step
Take 2 tbsp. to s. of this flesh, then form a tube by gently squeezing the flesh around a wooden or bamboo skewer.
Form this way all keftas.
Step 3
Heat a drizzle of oil in a pan, cook keftas for 5 minutes, brown them on all sides for about 5 minutes.
Put them on a hot dish.
Pour the wine in the pan, give a broth scraping the bottom, pour on the keftas.

Serve with an express semolina enriched with raisins and powdered with cinnamon.
