ingredients
8 flashes of 12 cm
300 g fresh or frozen peas
16 sweet peas
15 cl of whole liquid cream
16 langoustines
2 tbsp. to s. sesame seeds
1 egg white
20 g of butter
Steps
Lightning with lobsters
1 Heat a small peas, salt, pepper and water just in height. Cook for 10 minutes in small broths. Drain, puree. Let cool.
2 Dip the gourmet peas for 30 seconds in boiling salted water ; drain, let cool. Pour the very cold cream into a deep, deep salad bowl in a large salad bowl filled with ice cubes; whip approx. 5 min with an electric whisk to obtain a very firm mousse. Mingle it with cold mashed potatoes. Rectify the seasoning.
3 Decorate, salt, pepper, roll the langoustines in the egg white, then the sesame. Cook 3-4 min in butter over low heat.
4 Open the flashes at 2 in length. Fill with foam; put 2 langoustines and 2 sweet peas.
