1 Sweet Onion Crispbread

A cup of cous cous

A cup of lightly salted boiling water

A few olives

some slices of ripe tomatoes

A squeeze of lemon

A sprinkling of fresh coriander

Prepare the couscous by pouring over the boiling water. Cover and allow the couscous to swell for 5 minutes. Fluff up the couscous with a fork and add a squeeze of lemon. Stir in your sliced tomatoes and olives and finish with a sprinkling of the fresh coriander.  Best served with Sweet onion Crispbread. Enjoy!
