800 g of lamb ribs
Olive oil
For the marinade:
3 cloves of garlic
2 onions
1 small ginger root
2 tbsp. to s. brown sugar
2 tbsp. to s. honey
2 tbsp. to s. of Provence herbs
2 tbsp. to s. mustard
1/2 glass of sherry vinegar
1/2 glass of soy sauce

Step 1
Prepare the marinade. Peel and finely chop garlic, onion and ginger. In a bowl, mix all the ingredients. Rub the lambs through. Put the meat on a roasting pan, film and marinate 2 hours in the fridge.
2nd step
After this rest period, preheat the oven to 180 ° C (item 6). Drain the gaps. Put them back in the same dish, drizzle with olive oil, salt and pepper. Bake and cook for 10-15 minutes (depending on their thickness). Finish cooking in grill position for 5 min.

Serve. Detail the meat into small pieces to make mini-crosses. Serve with a salad of arugula.
