ingredients

4 yellow nectarines from here
1 rooster of 3 kg cut into pieces
1 bottle of red Burgundy wine
150 g smoked diced bacon
2 new onion boots
1 clove of garlic
1 star of star anise
1 bouquet garni
50 g of butter
2 tablespoons of oil
2 tablespoons flour
Salt
Grilled pepper

Steps

Step 1

Brown the pieces of rooster lightly on all sides in a large pan with 40 g butter and 1 tablespoon oil. Salt and pepper at the mill.

Add bacon and peeled onions and continue cooking over medium heat for about 5 minutes.

2nd step

Pour the flour into the rain, leave to brown and then add the wine, the bouquet garni, the star of star anise and the clove of garlic disguised.

Cook for 2 hours under cover and over low heat.

Step 3

Peel the nectarines , remove the stones and cut them in 4.

Add the nectarine segments to the casserole and continue cooking over low heat for 30 minutes.

Step 4

Remove the bouquet garni, rectify the seasoning and serve in the casserole.
