2 rolls of puff pastry
200 g of mascarpone
100 g of blond vergeoise sugar
50 g brown sugar
200 g strawberries
1 egg

Steps

Step 1

Prepare. Preheat the oven to 210 ° C (tea 7). In a bowl, work the mascarpone with the vergeoise. Book. Remove the dough from the refrigerator (it will be easier to work if it is cold), unroll it and, with a cookie cutter or

knife, cut out discs or 4 cm squares. Place them on the baking sheet lined with parchment paper. Prick them with a fork, brush with beaten egg.

2nd step

Cook. Bake for 5 minutes, sprinkle with brown sugar, continue cooking for 5 minutes: they must be well puffed and browned.

Step 3

Meanwhile, wash the strawberries, remove the peduncle, cut them fan-shaped.

Step 4

Assemble. Let the puffs cool. Drop 1 tbsp. to s. mascarpone on each, then decorate with a few strips of strawberry. Serve the rest of the strawberries in sweets.

tips

Organize well. You can prepare the puffs in advance. Once cooked, keep them in an airtight box, away from moisture.

Garnish them just before the tasting so that the pastry remains crisp.
